
Amber is the epitome of understated chic, with cool, clean decor, modern design and an eye-catching centre piece hanging from the ceiling.
The food is ultra modern, both in construction and presentation, mirroring the restaurant’s physical design. The seven-course tasting menu can be combined with a five-glass wine pairing, which is a great way to make most of your Amber experience. Every item is exquisitely presented, but the standout dishes include the duck fois gras with smoked fresh water eel, an indulgent appetiser not to be missed and the blue fin tuna, which is cubed, seared and glazed with maple syrup reduction. The John Dory with baby calamari stuffed with melted aubergine are bursting with flavour and the New Zealand langoustines are amazingly tender and fresh; however, the accompanying sweet and sour dressing is slightly overpowering. The Wagyu beef is excellent and comes with a delicate Charlotte potato mousseline (creamy mashed potatoes). The cheese platter offers five different cheeses, all very tasty, and the desserts will leave you breathless.
The wine list is broad, as you would expect, and the wine pairing is well chosen.
The service is truly excellent and the waiters are attentive and intimately aware of the nuances in the preparation of the food.
