We catch up with Fergal Murray, brewmaster at Guinness, over a pint of the black stuff to find out if good things really do come to those who wait.
Guinness is mentioned in a lot of old wives’ tales. What’s the weirdest myth you’ve ever heard?
I’ve heard everything from the fact it contains meat bones to the idea that is doesn’t travel well, both of which are not true at all.
But, everyone agrees Guinness tastes better in Ireland!
That’s just the psychology at work! Having a pint of Guinness in Ireland is a great drinking occasion just as having a glass of Champagne in the Champagne region of France would be. It’s the same drink, it’s delivered and stored in the same way, it’s just the experience is a little more magic in Ireland.
What is the perfect pint of Guinness and is there a certain drinking etiquette?
There are three elements that fulfill the Guinness experience; firstly, the barman has got to pour it correctly, not just for the perfect flavour but to build the theatre of delivering the drink to the glass. Secondly, you should drink it with your eyes. The visual impact of a pint of Guinness demands attention and you should take a moment to appreciate that. Finally, you savour the pint and allow your taste buds to be energised by the depth of flavour.
You’ve spent 25 years as a brew master at Guinness. Do you think all that knowledge makes a pint of Guinness taste better?
Yes, it’s a bit like having a high performance car. If you understand how the engine runs and fits together, your appreciation for it grows immensely.
Do you remember your first pint of Guinness?
I feel like I’ve always drunk Guinness! I suppose there must have been a first pint at the age of 17 or 18 but Guinness is so immersed in the culture of Ireland that to me it feels like it’s always been a part of my life.
What food would you recommend pairing with a pint of Guinness?
I think seafood is fantastic with Guinness. The simplicity of fresh seafood works really well in contrast to the earthy flavours in Guinness. Get me a pint with a dozen oysters and I'm in heaven!
As brewmaster at Guinness, you must have attended some pretty crazy events. What’s the most unusual party you’ve ever seen?
I went to the world’s largest toast in Denver, US. It was to open St Patrick’s Day season and we created a satellite link up to different locations all over US and then raised our pints of Guinness at exactly the same time in celebration. It was such a great atmosphere and we made and broke a world record all in the same day.
This is the first Sevens for Guinness. What made them decide to get involved this year?
I think the timing was right for the brand and we always feel rugby is a great partner for Guinness. Guinness has a similar philosophy to rugby; the love of it crosses cultures and boundaries and brings everyone together as friends.
