Setting
Dark, sophisticated tones of charcoal and black combine with glamorous touches of crystal for a contemporary ambience that is elegant yet cosy. The most stunning highlight is the unfettered view of Hong Kong’s breathtaking cityscape.

Food
World renowned for his inventive cuisine, three-star Michelin chef Gagnaire does not disappoint. Each course offers perfect mouthfuls of various innovative fare – a true gastronomic journey. Start with La France vue par Pierre Gagnaire, which features five delectable mini dishes, the highlight of which is the 63-degree eggs croquant spring onion with vodka. The egg is cooked at precisely 63 degrees – apparently, the best temperature for poaching an egg – for one hour, ensuring that it is the smoothest egg you’ll ever taste. For the main, tuck into the Homard bleu et crevettes. The sweetness of the fresh and succulent blue lobster is perfectly complemented by the slight kick from the tandoori prawns. Included in this main is also a traditional bisque with white mushrooms, a broth that is luxuriously rich yet light. End this fantastic meal with an equally wonderful dessert, such as the refreshingly light peach Melba.
